There is no better comfort food than this cherished staple – the chocolate chip cookie. This light, chewy cookie coupled with a cold glass of milk is what energizes me when I am battling some tough homework late into the night. It is not hard to create that perfectly textured cookie and you probably already have all the ingredients on hand.
Ingredients (Chocolate Chip Cookies)
- 8 tablespoons of unsalted butter
- 1/2 cup white sugar
- 1/4 cup packed dark brown sugar
- Splash of vanilla (to your liking)
- 1 egg
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- Salt to taste
- 3/4 cup chocolate chips (mixture of milk and dark)
- 3 tablespoons of prepared coffee (any brand will do)

- Preheat the oven to 350 degrees. Microwave the butter for about 40 seconds to melt it just a little. Prepare coffee and reserve three tablespoons
- Using a stand mixer or electric beater, beat the butter with the sugars until fluffy. Add the vanilla, egg, and coffee; beat on low speed until incorporated.
- Add the flour, baking soda, and salt along with the chocolate chips and mix until no individual ingredients can be seen.
- Using an ice cream scoop, scoop medium size balls of dough on a baking tray lined with parchment paper. Bake for 9-12 minutes until the cookies resemble a light brown colour.
- Let them cool and enjoy later on with a cold glass of milk!
