This dessert is as warmly delicious as pretty to behold. The juicy sweetness of fresh strawberries and blueberries mingle together under a golden streusel topping. Little sugar is needed as the natural sweetness of the berries does the trick, making this not too calorie-laden. It is best eaten warm, with a scoop of vanilla ice-cream or a dollop of whipped cream. This is great summer dessert as it truly showcases the sweet succulence of berries at their ripe best!

Ingredients (Berry Crisp)

  • 8 oz strawberries, halved
  • 12 oz blueberries
  • Juice from 1/2 a orange
  • 1/4 cup granulated sugar, divided
  • 1 tbsp cornstarch
  • 1/2 stick of salted butter, room temperature
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup old-fashioned oats
  • 1/2 tsp apple pie spice
  • 1/4 tsp almond extract + 1/2 tsp vanilla extract

Cook Time 30 min

(Serves 6-8)

  1. Preheat your oven to 350 degrees Farenheit; setup 6-8 (depending on the size you have) ramekins on a cookie sheet to prevent spillage in the oven.
  2. Meanwhile large bowl, combine your berries, orange juice, 2 tbsp of granulated sugar, cornstarch, and vanilla until the berries are well coated with the mixture. In a separate bowl, combine all of your other ingredients to make the “crumble” or “crisp” for the top, until the mixture resembles chunky crumbs. NOTE: the almond extract is optional, but will add a great depth of flavor.
  3. Add your berry mixture evenly to each ramekin and crumble the oats/flour mixture on the top of each ramekin. Bake for 30-35 minutes until the crisp is golden and the berries are bubbly.
  4. Serve warm and enjoy with something cold!
