Here’s a multi-layered treat: fruit, shortbread, and streusel, come together in perfect unison. I like using fresh strawberries and harnessing their sweetness while keeping granulated sugar to a minimum. The perfect accompaniment to afternoon coffee of tea!
Ingredients (Strawberry Bars)
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 cup salted butter, cold and cubed
- 1 large egg + 1 large egg yolk
- 1 cup packed dark brown sugar
- 2 tsp vanilla extract
- 4 cups chopped strawberries (quartered)
- 1/3 cup granulated sugar
- 1 and 1/2 tbsp cornstarch
- 1/2 tsp (or more) almond extract
- 1/2 cup powdered sugar
- Milk (as needed)
Method
Prep Time: 30 min
Cook Time: 45-50 min
(Serves 12-16)
- Preheat your oven to 350 degrees Fahrenheit and butter a 13×9 in pan to ensure easy release after baking. Then, combine the flour and baking powder in a large bowl; cut the butter into the mixture using a food processor or a pastry cutter (you want a crumbly mixture). Then add in the egg(s), brown sugar, and vanilla until moist.
- Press 2/3 of the mixture firmly into the bottom of the pan and reserve the rest for the top. In a separate bowl combine the strawberries, granulated sugar, and cornstarch. Pour this over the crust and crumble the rest of the flour mixture over the top.
- Bake for 45-50 min until golden and bubbly. Let cool for a minimum of 2 hours before cutting.
- Meanwhile, make your glaze by combining milk, powdered sugar, and almond extract (if desired). Drizzle over the cooled bars.
- Cut and serve!
