Food is the ultimate cultural artifact and I love tracing the origins of dishes. Cajun cooking, for example, was brought by French colonists to Louisiana and has a distinctive combination of aromatic spices. They remind me of south Asian cuisine but with a unique European twist. In this simple recipe I use succulent pieces of chicken thigh meat, marinated with Cajun spices and broiled to perfection in the oven. In good weather, you can certainly transport these skewers to the outdoor grill. Serve up with a side of spicy Spanish rice (also featured on this blog)!

Ingredients (Skewers)

  • 1 tsp chili powder
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp ground cumin
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 lb chicken thigh

Method

Prep Time: 30 min

Cook Time: 30-45 min

(Serves 5)

  1. Marinate the chicken with all the ingredients for one hour.
  2. Meanwhile preheat your oven to 450 degrees Fahrenheit or you can use the broil (low) setting. Add chicken to your skewers and roast for 30-45 min or until an internal temperature reaches 165 degrees Fahrenheit. Note: you can also grill these!
  3. For the last five min broil on high to get some char.
  4. Serve with assorted salsas and sides!
