Here’s a dish that brightens up your plate just as much as it tingles your palate. The fiery flavors
of east blend into smooth tomato paste which lovingly coats the chicken thighs as they roast to
perfection. A great idea for a hearty weekend dinner and for best results marinate the chicken
overnight. Top it off with a sprig of basil and the dish becomes spectacular!

Ingredients (Roasted Chicken)

  • 6-8 chicken boneless chicken thighs
  • 6 cloves garlic, minced
  • 2-inch piece ginger, peeled and grated
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Juice and zest of 1 lemon (2-3 tbsp)
  • 3 tbsp tomato paste
  • 1 tsp salt, or to taste
  • Few basil leaves or fresh cilantro for garnish

Method

Prep Time: 20 min

Cook Time: 30-45 min

(Serves 4-6)

  1. Mix ginger, garlic, cumin, coriander, salt and chili powder together. Then blend the spice mix smoothly with the tomato paste using a spoon. Put the chicken thighs in a bowl, and toss with the mixture until fully coated.
  2. Marinate in the refrigerator for up to a day; minimum would be 30 minutes. Meanwhile, heat the oven to 400 degrees Fahrenheit. Put the thighs in a roasting pan and bake for anywhere from 35 to 45 minutes (or until cooked through – 165 degrees Fahrenheit).
  3. Remove from oven and garnish with basil or cilantro.
  4. Serve warm with spaghetti or basmati rice, and enjoy!
