Here’s a warm, hearty and colorful dessert: buttery golden crust topped with mixed berries which are sweet, yet tart, and bursting with flavor. The perfect topping, you ask? A scoop of creamy vanilla ice-cream or a dollop of whipped cream. No matter the season, this dessert never fails to impress!

Ingredients (Berry Cobbler)

Berry Layer 

  • 4 cups mixed berries (however you want to do it!)
  • 1/8 -1/4 cup granulated sugar (depending on sweetness of berries)
  • 1 tbsp cornstarch
  • 1/2 tsp lemon juice

Cobbler Layer

  • 3/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 3 tbsp butter, cubed and cold
  • 1/2 cup buttermilk
  • Optional: coarse sugar.

Method

Prep Time: 20 min

Cook Time: 45 min

(Serves 6)

  1. Whisk the flour, sugar, baking powder, and salt together in a large bowl. Then, cut the butter into the mixture until it resembles a coarse crumble.  While slowly mixing, add in the buttermilk. Mix until combined. Take handfuls of dough and flatten it out over a 9 in pie dish.
  2. Mix the remaining ingredients with the berries, and then add to the top of the cobbler layer. Bake for 45-55 minutes, or until golden brown. Let cool for 10 min before serving!
  3. Serve and enjoy with ice-cream!
