If you’re in the mood for some spicy, tangy chicken, look no farther. Here is an easy, flavorful marinade that coats the chicken and can be grilled or baked to perfection. I’d recommend marinating for at least 4 hours for best results. No need to go to Nando’s  – you can be a star in your own kitchen! In case you’re interested in its culinary origins, Peri-peri originated in Angola and Mozambique when Portuguese settlers landed there with chili peppers. Now we get to relish this amazing taste all over the world.

Ingredients (Peri Peri Chicken)

  • 2 lb chicken (legs and thigh – with bone)
  • 1 1/2 tsp red chilli powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp sugar
  • 1 tbsp flour
  • 4 tbsp lemon juice
  • 4 tbsp vegetable oil
  • 1 tbsp white vinegar
  • 1 tbsp garlic paste
  • Red food color (as desired)

Method

Prep Time: 45 min

Cook Time: 30-35 min

Serves 4-6

  1. In a large bowl combine all the ingredients above (besides the chicken); then add in the chicken and massage the marinade into the chicken using your hands. Let sit in the fridge for 30 min or overnight (for best results).
  2. Get a large pan, drizzled with a little oil, to medium-high heat. Add your chicken to the pan and sear for 1-2 minutes (on high heat) on each side (you want some char; this locks in the flavor). Then transfer all the chicken to a baking sheet (with a rack) and broil on low, in the oven, until the chicken is cooked through.
  3. You may want to use a thermometer to make sure the chicken is fully cooked (ideal temperature 165 degrees Fahrenheit).
  4. Once the chicken is fully cooked, take the chicken out of the oven and brush with oil.
  5. Serve and enjoy!
