Ingredients (Blueberry Coffee Cake)
Cake
- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1/2 cup whole milk
- 2 teaspoons vanilla extract
- 2 tbsp lemon zest
- 2 cups blueberries, fresh
Crumb Topping
- 1/2 cup sugar + 2 tbsp
- 1/2 cup all-purpose flour
- 5-6 tablespoons butter, melted
Glaze
- 1 cup powdered sugar
- 1-4 tablespoons lemon juice

Prep Time: 15 min
Cook Time: 45-60 min
Serves 12-14
- Preheat oven to 350 degrees Fahrenheit. Butter a 9-inch springform. Then prepare crumb topping.
- In a small bowl, whisk together flour, baking powder and salt and set aside. In a large bowl, beat butter and sugar until fluffy. Then add eggs, vanilla and milk, and lemon zest. Fold the flour mixture and the blueberries until combined.
- Spread batter evenly into prepared pan. Sprinkle with crumb topping.
- Bake for 45 – 60 minutes, depending on oven, or until a toothpick comes out clean.
- Cool and drizzle icing on cake.
