Here’s an delicious way to get your dose of antioxidants and confection! Plump blueberries baked into the goodness of a moist coffee cake. It is an explosion of color and taste in every piece. Adds a whole new meaning to your coffee break.

Ingredients (Blueberry Coffee Cake)

Cake

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 2 teaspoons vanilla extract
  • 2 tbsp lemon zest
  • 2 cups blueberries, fresh

Crumb Topping

  • 1/2 cup sugar + 2 tbsp
  • 1/2 cup all-purpose flour
  • 5-6 tablespoons butter, melted

Glaze

  • 1 cup powdered sugar
  • 1-4 tablespoons lemon juice

Prep Time: 15 min

Cook Time: 45-60 min

Serves 12-14

  1. Preheat oven to 350 degrees Fahrenheit. Butter a 9-inch springform. Then prepare crumb topping.
  2. In a small bowl, whisk together flour, baking powder and salt and set aside. In a large bowl, beat  butter and sugar until fluffy. Then add eggs, vanilla and milk, and lemon zest. Fold the flour mixture and the blueberries until combined.
  3. Spread batter evenly into prepared pan. Sprinkle with crumb topping.
  4. Bake  for 45 – 60 minutes, depending on oven, or until a toothpick comes out clean.
  5. Cool and drizzle icing on cake.
  6. Serve and enjoy!
