Sometimes you just need the fix of a sugary, fluffy doughnut. So why not make the calories truly worthwhile by creating your own sinful confection? My favorite one has a super light Oreo filing nestled within it. Every bite is a pleasurable transgression!

Ingredients (Doughnuts)

  • 1 cup whole milk, warmed
  • 1 Tablespoon active dry yeast
  • 2 large eggs
  • 1/3 cup granulated sugar
  • 6 Tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 cups all-purpose flour (and more as needed)
  • 1 – 2 quarts vegetable oil, for frying

Method

Prep Time: 2 hours

Cook Time: 10 min

Serves: 12 (+12 doughnut holes)

  1. Whisk the warm milk, yeast, and sugar together in a  bowl. Let the yeast activate for 5 minutes.  Then, add the eggs, butter, vanilla, nutmeg, salt, and flour. Beat (or knead) on low speed for 1 minute. Scrape down the sides of the bowl with a rubber spatula as needed. Add remaining flour and knead until the dough comes together and pulls away from the sides of the bowl (needs to be slightly sticky).
  2. Knead for further minute or so on a lightly floured surface. Lightly grease a large bowl with oil and place the dough in the bowl; cover the bowl with plastic wrap. Allow the dough to rise in a relatively warm environment for 1.5-2 hours (until the dough has doubled).
  3. When the dough is ready, punch it down to release the air. Using a rolling pin, roll the dough out until it is 1/2 inch thick. Using your desired cutters, cut about 12 doughnuts. You will have extra donut holes for later. (:
  4. Place your prepared doughnuts on parchment paper. Heat oil to 375°F in a large pot. Add 2 doughnuts at a time and cook for 1 minute on each side. Carefully remove and place fried doughnuts onto a prepared rack. Repeat, as necessary
  5. Serve and enjoy your doughnuts! (See note below)

Note: this recipe is for a basic (plain) doughnut; instructions for further flavour combinations are shown below.

  • Simple glaze: start with 2 cups of powdered sugar and add milk until your desired consistency is reached. Also add in some vanilla for extra flavour
    • Chocolate or strawberry glazed: for a chocolate glazed add some melted chocolate to the prepared glaze and for the strawberry, add in either pureed strawberries or finely ground freeze-dried strawberries (you can also dye the glaze pink).
