Now here is some really authentic Indian street food. Since I must resist the temptation to consume it on the streets of Bombay I had to find a way to make it at home. You could make just the vegetable curry and complement it with store bought rolls but if you are determined to go all the way with this then I have the perfect recipe for the soft buttery rolls as well. The fluffy bread roll is a perfect complement for the fiery, thick vegetable curry. Serve it hot with a dash of butter, garnished with diced red onions and cilantro. May be eaten as a snack anytime or as the main course. Impress your vegetarian friends at any party!

Ingredients (Pav Bhaji)

  • 1 tbsp + 1 tbsp butter
  • 3 tomato, chopped (finely)
  • ¼ cup peas 
  • ½ capsicum
  • 2 potato, boiled & mashed
  • 1/2 tsp red chilli powder 
  • ¼ tsp turmeric 
  • 1 tsp + ½ tsp pav bhaji masala (found in speciality stores)
    • Or substitute for a homemade version, (or even leave out; it will still taste amazing!)
  • 2 tsp dry fenugreek leaves
  • 3 tbsp coriander leaves, finely chopped
  • 1 tsp ginger garlic paste
  • 1 onion, finely chopped
  • 2 tbsp lemon juice (fresh is better)
  • 1 tbsp lime juice
  • 3 drops red food colour, optional
  • Salt to taste
  • Water to adjust consistency

For the Pav (Bread)

  • 8 bread rolls (Pav, dinner rolls, or even hamburger buns)
  • 4 tbsp butter
  • 1/4 tsp red chilli powder
  • 4 tsp coriander leaves, finely chopped

Method

Prep Time: 20 min

Cook Time: 30 min

Serves (8-12)

  1. In a large pan,  heat 1 tbsp butter and add the vegetables, cooking and mashing all the while. Them, add 1/2 tsp chilli powder, ¼ tsp turmeric, 1 tsp pav bhaji masala, 1 tsp fenugreek leaves and 2 tbsp coriander leaves. Cook until consistency has thickened, just a bit.
  2. In the middle of the mixture, add a tbsp of butter, ½ tsp pav bhaji masala, 1 tsp kasuri methi. In addition, add 1 tbsp coriander leaves, 1 tsp ginger garlic paste, 1 onion, and lemon and lime juice. Sautee well.
  3. Add 3 drops of red food colour, if desired. Boil and mash for 5 minutes adjusting consistency.
  4. Finally, serve with pav/bread (after toasting with the ingredients listed above).
  5. Enjoy!
