Here’s a great way to spice up a barbecue or cook-out this summer! This healthy recipe uses ground chicken and mixes in an aromatic combination of spices so that the entire kebab is sizzling with taste. You can dial up or down the heat and zing level by adjusting the chili  powder and crushed red peppers. Pairs well with rice , bread or a bed of greens. Drizzle with coriander or mint chutney for a grand finale.

Ingredients (Kabobs)

  • 2 pounds ground chicken
  • I tsp salt
  • 1 tsp ginger paste (or finely grated ginger)
  • 1 tsp garlic paste (or crushed garlic)
  • 1 tsp coriander powder
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp cumin powder
  • 1 large onion finely sliced, fried golden brown and excess oil removed.
  • ½ cup bread crumbs
  • 1/2 tsp garam masala (optional and available in south Asian grocery stores)
  • 1 tsp chat masala (optional and available in south Asian grocery stores)
  • Finely chopped cilantro 1 teaspoon (optional)
  • Olive oil of vegetable oil

Method

Prep Time: 15 min

Cook Time: 10 min

Serves 15-20

  1. Place ground chicken and all the ingredients except oil, in a chopper or food processor. Process until well combined.
  2. Cover and put in the refrigerator for 2 hours to blend flavors.
  3.  Now mold kebab into desired shape (flat disks or small rounded cylinders) using hands. Place in grill basket and barbecue for about 10 minutes. Baste with oil during grilling. Kebabs may also be shallow fried or placed in over, under low broil, to cook.
  4. Serve with mint chutney or raita.
