Summer brings warm sunshine and lazy weekend afternoons with picnics and cook-outs. A perfect dessert to complement any sunny get together is this simple blueberry pie. The juicy, sweet goodness of plump blueberries is perfect nestled under a crusty lattice – it is as pretty to look at as it is delicious to eat!
Ingredients (Blueberry Pie)
- 3/4 cup granulated sugar
- 3 tbsp cornstarch
- 1/2 tsp cinnamon
- 4 cups fresh blueberries
- 1 egg (beaten well)
- 1 9 in pie crust
- Butter
Method
Prep Time: 10 min
Cook Time: 50 min
Serves (6-10)
- Combine all ingredients in a bowl and add to a prepared 9 in pie crust (homemade or store bought)
- For the lattice topping, cut thin strips of extra pie crust and align them on top of the pie in a desired formation.
- Then brush with egg wash and sprinkle with granulated sugar. For added richness, dot some butter on top (salted would be best).
- Bake at 375 degrees Fahrenheit for 50 min.
- Serve warm and enjoy!
Note: if the crust begins to brown, cover with some foil.
