Summer brings warm sunshine and lazy weekend afternoons with picnics and cook-outs. A perfect dessert to complement any sunny get together is this simple blueberry pie. The juicy, sweet goodness of plump blueberries is perfect nestled under a crusty lattice – it is as pretty to look at as it is delicious to eat!

Ingredients (Blueberry Pie)

  • 3/4 cup granulated sugar
  • 3 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 4 cups fresh blueberries
  • 1 egg (beaten well)
  • 1 9 in pie crust
  • Butter

Method

Prep Time: 10 min

Cook Time: 50 min

Serves (6-10)

  1. Combine all ingredients in a bowl and add to a prepared 9 in pie crust (homemade or store bought)
  2. For the lattice topping, cut thin strips of extra pie crust and align them on top of the pie in a desired formation.
  3. Then brush with egg wash and sprinkle with granulated sugar. For added richness, dot some butter on top (salted would be best).
  4. Bake at 375 degrees Fahrenheit for 50 min.
  5. Serve warm and enjoy!

Note: if the crust begins to brown, cover with some foil.
