Now here’s a dessert that is just as gorgeous to look at as it is heavenly to eat. Vibrant, smooth and velvety cheesecake rests atop a crunchy oreo crust. Every mouthful brings the satisfaction of creamy red velvet mingled with a crisp chocolate flavored base. Great for festive meals around the holidays or during any special celebration! 

Ingredients (Cheesecake)

Crust:

 

  • 17 chocolate cream Oreo cookies, crushed
  • 1/4 cup butter, melted
  • 1 tablespoon sugar

Filling:

  • 3 packages (8 ounces each) cream cheese, softened
  • 1-1/2 cups sugar
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 5 tablespoons baking cocoa
  • 2 teaspoons vanilla extract
  • 4 large eggs, room temperature
  • 1 bottle (1 ounce) red food coloring (as needed or desired color is reached)

Method

Prep Time: 20 min

Cook Time: 60-70 min

Serves (12-14)

  1. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil.
  2. In a small bowl, combine the cookie crumbs, butter and sugar. Press onto the bottom of prepared pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, buttermilk, cocoa and vanilla. Add eggs, until combined.  Finally, stir in food coloring until the desired color is reached. Pour over crust. Place springform pan in a large baking pan; add  hot water to the larger pan halfway up the sides of the cheescake .
  4. Bake at 325° until center is just set, 60-70 minutes. Remove and cool overnight. Cut and add whipped cream and oreos, if desired.
  5. Serve and enjoy!
