This is a truly “look good, taste good and feel good” companion to afternoon coffee. You have the warmth of cinnamon fused into a buttery cake, topped of with crunchy streusel. This is not hard to prepare and can be a great dessert to bake and take to work or enjoy during a leisurely Sunday afternoon.
Ingredients (Coffee Cake)
Cake
- 1/2 cup unsalted butter softened
- 8 oz cream cheese softened
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1 tsp cornstarch
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 cup buttermilk
Cinnamon Swirl
- 1/4 cup sugar
- 1 1/2 teaspoon cinnamon
Streusel Topping
- 1 1/3 cup all-purpose flour
- 1 cup
- 3 Tablespoons granulated sugar
- 4 teaspoons cinnamon
- 10 Tablespoons unsalted butter melted
Glaze (optional)
- 1/2 cup powdered sugar
- 2-4 teaspoons milk

Cook Time: 40 -45 min

Preheat oven to 350 degrees Fahrenheit and lightly grease 13×9 baking pan. In stand mixer or bowl whisk together butter and cream cheese; then, beat in sugars until light.

Add eggs, one at a time, beating until combined. Stir in vanilla extract.

In a separate, medium-sized bowl, whisk together flour, baking powder, cornstarch and salt. Gradually add flour mixture to wet ingredients, alternating with buttermilk until no lumps are seen

Spread about half of the batter into prepared pan. Quickly whisk together sugar and cinnamon mixture for the ripple inside. Sprinkle and cover with the rest of the batter.

Prepare the streusel topping according to ingredients listed above; just combine everything until “crumbly”. Add the topping onto the batter and bake for 40-45 min until golden and cooked through.
- For an extra touch, make a glaze (accordingly). Use a fork and lightly pour the glaze all over the cake.
- Serve and enjoy warm!
