This is a wonderful, hearty salad that tastes just as delightful as it looks. It says “spring” and
brightens up any table! It can be eaten as whole meal for lunch or makes a great side dish at any
barbecue. The warm couscous softens the freshly diced vegetables and brings out their crisp
flavors. Finally the dressing adds just the right touch of zest and tanginess. A great fusion of
Arab and Indian cultures in every mouthful!
Ingredients (Couscous Salad)
- 1 cup medium Couscous or Maftoul (Ziyad brand works well)
- 2 tbsp. olive oil
- 1 medium red onion, finely chopped
- ½ tsp salt
- ¾ cup red bell pepper, finely chopped
- ¾ cup red bell pepper, finely chopped
- 1 small tomato, finely chopped
- ½ tsp Italian seasonaing
- ¼ cup chopped cilantro
- ½ tsp hot pepper flakes (optional)
- ½ tsp curry powder (optional)
- Dressing
- 2 tsp honey
- 3 tbsp olive oil
- Juice of 1 large lemon
- Salt and pepper to taste
Prep time: 15 minutes
Cook time: 10 minutes
(Serves 4-6)
Method
- Bring 5 cups of water to a boil. Add the olive oil and couscous and a dash of salt.
- Simmer 10-12 minutes or until tender.
- Turn off heat and drain off water.
- Add the warm cooked couscous or maftoul to a large bowl with all the chopped
vegetables and associated ingredients. Toss with dressing and serve right away. - Enjoy!
