For green bean enthusiasts who don’t want their legumes drenched in a heavy sauce or baked, here is a
simply South-Indian stir-fry. Adds a touch of variation to any Thanksgiving table and a dash of new
flavors too. Beans are lightly tossed with olive oil, and seasoned with fresh garlic, whole cumin and
dusted with paprika. You can bring a little Madras to even a Manassas thanksgiving table!

Ingredients (Green Beans)

  •  16 oz. Green Beans (trimmed and cut to desired length)
  • 1 Onion diced
  • 2-3 garlic cloves minced
  • 1 teaspoon whole cumin seeds
  • 1 tablespoon olive oil
  • Dash of paprika
  • Optional – a spoon of grated coconut frozen or fresh

Method

Prep Time: 10 min

Cook Time: 20 min

(Serves 10)

1. Heat olive oil in a round shallow stir-fry pan.
2. Sauté onions, garlic and whole cumin until onions are golden brown.
3. Add the finely green beans and fry for 1-2 minutes.
4. Add the salt and paprika and sauté for 30 seconds.
5. Place a lid on the pan and turn the stove to low heat until beans are just tender.
6. Toss in the grated coconut if desired.
7. Serve warm as a side or make it a meal with steamed white rice.
