There’s something very soothing about a warm, moist muffin infused with pumpkin spice and studded with chocolate chips. It has the flavors of fall and also the richness of chocolate in every flavorful mouthful. Not too hard to make and perfect for breakfast, or really anytime! You could jazz up the spice if you’re feeling more like “Madras” or leave it mild like in “Manassas”.
Ingredients (Pumpkin Chocolate Muffins)
- 4 eggs
- 1 can pumpkin puree (not filling)
- 2 cups sugar
- 1 1/2 cups vegetable/canola oil
- 3 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg (optional)
- 1 tsp ginger (optional)
- 1 teaspoon baking powder
- 1 1/2 cups semisweet chocolate chips
- Salt to taste

Preheat oven to 400° Fahrenheit. Paper liners are optional.

In a bowl, beat the sugar, eggs, spices, and oil until combined. Add the flour, baking powder, baking soda, and salt. Mix until all components are incorporated. Lastly, fold in the chocolate chips. Fill the greased muffin tin cups three-fourths the way up.

Bake for 15-20 minutes until an inserted toothpick comes out clean. Cool for 20 min and serve.
