Some may not realize that the Greek empire under Alexander from Macedonia had stretched all the way to India. Well, here is a dish that commemorates the influence that both cultures had on each other! It’s a slight departure from the traditional Greek moussaka with more spices and without dairy. Nonetheless, it’s a hearty offering of rich tomato-based ground beef sauce, alternating with eggplant, and topped off with thin slices of green bell pepper and baked to perfection. Enjoy with rice or your favorite bread!

Ingredients (Greco-Indian Moussaka)

  • 1 lb ground beef
  • 1 onion (chopped)
  • 6-8 medium eggplants
  • 1 green pepper
  • 1 can tomato sauce
  • salt/pepper to taste
  • 6 cloves of garlic
  • 1 tbsp white vinegar

Method

Prep Time: 15-25 min

Cook Time: 20-30 min

(Serves 10-12)

  1. Slice eggplants and fry. Brown the ground beef with the onions, garlic, salt/pepper, and desired spices.
  2. Add tomato sauce to the ground beef mixture. Then add the vinegar and simmer for 15 min. In a glass baking dish, arrange a layer of egg plant to cover the bottom of the pan. Layer 1/2 of the ground beef mixture on top. Repeat one more time with the egg plant and beef mixtures.
  3. Slice green peppers and place on the top. Bake at 350 degrees Fahrenheit for 20-30 min until bubbling and hot.
  4. Serve and enjoy!
