Some may not realize that the Greek empire under Alexander from Macedonia had stretched all the way to India. Well, here is a dish that commemorates the influence that both cultures had on each other! It’s a slight departure from the traditional Greek moussaka with more spices and without dairy. Nonetheless, it’s a hearty offering of rich tomato-based ground beef sauce, alternating with eggplant, and topped off with thin slices of green bell pepper and baked to perfection. Enjoy with rice or your favorite bread!
Ingredients (Greco-Indian Moussaka)
- 1 lb ground beef
- 1 onion (chopped)
- 6-8 medium eggplants
- 1 green pepper
- 1 can tomato sauce
- salt/pepper to taste
- 6 cloves of garlic
- 1 tbsp white vinegar
Method
Prep Time: 15-25 min
Cook Time: 20-30 min
(Serves 10-12)
- Slice eggplants and fry. Brown the ground beef with the onions, garlic, salt/pepper, and desired spices.
- Add tomato sauce to the ground beef mixture. Then add the vinegar and simmer for 15 min. In a glass baking dish, arrange a layer of egg plant to cover the bottom of the pan. Layer 1/2 of the ground beef mixture on top. Repeat one more time with the egg plant and beef mixtures.
- Slice green peppers and place on the top. Bake at 350 degrees Fahrenheit for 20-30 min until bubbling and hot.
- Serve and enjoy!
