Chocolate and raspberries are truly a match made in heaven! This is one of my favourite desserts — the sweet tanginess of red raspberries meets the velvety rich darkness of chocolate, on a crusty chocolate wafer base. Now this sweet harmony AND always a hit at any party!

Ingredients (Chocolate Raspberry Tart)

  • 1 tbsp of sugar
  • 1 2/3 cups of chocolate graham cracker crumbs
  • 1/2 Cup of Melted Butter
  • 1 1/4 cup of semisweet chocolate chips
  • 1 cup of heavy cream
  • 1/8 tsp of Salt
  • About 3 cups of fresh raspberries

Method 

Prep Time: 20 min

Cook Time: 90 min

1) Preheat the oven to 350 degrees. Butter a “9” tart pan.

2) In a large bowl, combine the crushed chocolate graham crackers, melted butter and sugar. Evenly spread the crumb mixture in the pan. Place it on a baking sheet and refrigerate it for about 20 minutes.

3) Bake the chocolate shell at 350 degrees for about 10 minutes.

4) Place 1 cup of the raspberries in a blender and puree it. Pass it through a fine sieve and get rid of the solids. Place the heavy cream in a small sauce pan and bring it to a simmer, and then pour over the chocolate chips.

5) Stir until the chocolate is all melted and then stir in the raspberry puree and salt. Pour the chocolate mixture into the baked tart shell and chill it in the fridge for about an hour and a half. Arrange the raspberries over the top.
