There’s many ways to cool off on a sultry summer evening – my favorite one is to dive into a bowl of freshly prepared guacamole. There’s nothing better than scooping into the velvety goodness of ripe avocado perfectly seasoned with the zing of lemon, cilantro and green chili. The Aztecs would be proud (I hope!) of how far and how well their dish has travelled. Recipe borrowed and modified from Senora Anamaria Delaguilar. Try it – and there’s no going back!
Ingredients (Summer Fresh Guacamole)
- 3 avocados
- 1 red onion
- 8 medium sized tomatoes
- 1/2 cup cilantro
- 1 green chilli
- Juice from 1 lemon/lime
- Salt to taste
Method
Prep Time: 30 min
Cook Time: 0 min
(Serves 10)
- Cut the onion, tomatoes, cilantro and chilli finely.
- Add salt and lemon/lime juice by preference.
- Mash the avocados in a separate bowl and add to the tomato mixture. Mix all ingredient well and serve with your choice of tortilla chips.
- Enjoy outside on a sunny day!
