What goes well with a chilly Sunday afternoon as you’re trying to get your life in order for the coming week? Well, I think a bowl of warm vegetarian chilli might be just the thing. It takes just a few ingredients, not too much prep time AND it’s healthy! Enjoy a bowl full of this goodness, topped with a dollop of sour cream and with some warm, crusty sourdough bread.
Ingredients (Vegetarian Chilli)
- 1 large red onion
- 2-3 stems of celery (chopped)
- 2 large carrots (chopped)
- 1 large green bell pepper (chopped)
- 1 15 oz can of red kidney beans
- 1 15 oz can of diced tomatoes
- 1 15 oz can of tomato sauce
- 1 15 oz can of hominy (or corn)
- 1 tsp cumin powder
- 1/2 tsp red chilli powder
- 6 large cloves of garlic (minced)
- Olive oil
- Cilantro
- Salt to taste

Prep Time: 15 min
Cook Time: 30 min
(Serves 9)
- Sautee onions and garlic in olive oil, until they are soft and translucent. Add the vegetables and fry over high heat for two minutes.
- Stir in the cumin, salt, and red chilli powder for an additional minute. Pour in the diced tomatoes and tomato sauce. Mix on high heat for about a minute.
- Finally, add in the washed and drained kidney beans and hominy. Bring to a boil and simmer on low heat for twenty minutes or until the vegetables are tender.
- Garnish with chopped cilantro.
- Serve with a dollop of sour cream and bread of your choice.
