What goes well with a chilly Sunday afternoon as you’re trying to get your life in order for the coming week? Well, I think a bowl of warm vegetarian chilli might be just the thing. It takes just a few ingredients, not too much prep time AND it’s healthy! Enjoy a bowl full of this goodness, topped with a dollop of sour cream and with some warm, crusty sourdough bread.

 

 

 

 

 

 

 

 

 

Ingredients (Vegetarian Chilli)

  • 1 large red onion
  • 2-3 stems of celery (chopped)
  • 2 large carrots (chopped)
  • 1 large green bell pepper (chopped)
  • 1 15 oz can of red kidney beans
  • 1 15 oz can of diced tomatoes
  • 1 15 oz can of tomato sauce
  • 1 15 oz can of hominy (or corn)
  • 1 tsp cumin powder
  • 1/2 tsp red chilli powder
  • 6 large cloves of garlic (minced)
  • Olive oil
  • Cilantro
  • Salt to taste

Method

Prep Time: 15 min

Cook Time: 30 min

(Serves 9)

  1. Sautee onions and garlic in olive oil, until they are soft and translucent. Add the vegetables and fry over high heat for two minutes.
  2. Stir in the cumin, salt, and red chilli powder for an additional minute. Pour in the diced tomatoes and tomato sauce. Mix on high heat for about a minute.
  3. Finally, add in the washed and drained kidney beans and hominy. Bring to a boil and simmer on low heat for twenty minutes or until the vegetables are tender.
  4. Garnish with chopped cilantro.
  5. Serve with a dollop of sour cream and bread of your choice.
  6. Enjoy!
