Have you ever wondered if there was an elegant alternative to the traditional pizza? Well, there is! In place of the common bread dough, the flaky puff pastry is topped with a creamy ricotta and Parmesan mixture. The slight sweetness of the cherry tomatoes and the basil garnishes will deliciously accompany the tart. This recipe is perfect if you are in rush to make an appetizer or even a main meal. I love to make this when I am craving a snack after getting home late from a school activity!

Ingredients (Tomato and Basil Tart)

  • 12 oz store bought puff pastry
  • 10 oz ricotta cheese
  • 10 oz cherry tomatoes
  • 2 eggs (beaten)
  • 3 tbsp freshly cut basil
  • 1 oz Parmesan cheese (grated)
  • Salt and black pepper (to taste)
  • 1 tsp ground oregano

Prep Time: 10 min

Cook Time: 20 min

(Serves 6)

  1. Preheat the oven to 400 degrees Fahrenheit. After letting the pastry thaw, roll the pastry on a lightly floured surface to a rectangle measuring to 10 x 15 in. Then place it on a pan larger than the pastry itself.
  2. Then half the cherry tomatoes using a sharp knife on a cutting board. In a large mixing bowl, stir the ricotta cheese, eggs, basil, Parmesan cheese, and oregano until thoroughly combined. Season with salt and pepper.
  3. Spoon the ricotta mixture on the rolled puff pastry leaving a 1 in border around the sides. Then, generously place the halved cherry tomatoes all over the pastry.
  4. Bake for 20 minutes or until the tart is golden brown. After letting the tart cool, garnish with fresh leaves of basil.
